As I rolled up to Cafe Gratitude for lunch, I checked my watch and saw I was on the early side. Like a 10 handle on the hour, early side. I had to smile. I was fired up to check out this vegan paradise!
I hadn’t looked at the menu long before I knew I was going to have to try their bruschetta, called I Am Present. I put that order in and picked my server’s brain about different smoothies and drinks, before settling into a further read of the menu.
I Am Present came on toasted whole wheat baguette slices. It had caramelized onions mixed with mashed butternut squash, topped with cashew cheese and some fig balsamic and rosemary. The warm rich taste of the base and the smooth and creamy cashew cheese contrasted with the balsamic. Wow!! Wicked good.
